Side note text: The digestibility of resistant starch depends largely on the retrogradation of highmolecularweight starch (retrograded resistant starch). RVA (Rapid Visco Analyser) profiles of different RS types. 10 % suspension, 95minute holding. Sample 1945 shows high retrogradation tendency; sample 1946 is slightly inferior. Yet under lowmoisture conditions, sample 1946 presents strong retrogradation. The relative initial viscosity of the control group reaches ~2500 AU, followed by thorough degradation. AOAC testing gives dietaryfiber result of 5009.88. Repeated tests of different batches show consistent results. K130 performs similarly. Y90 delivers higher viscosity, stronger heat and shearresistance, and higher dietaryfiber content. Control group reference sample: (HI55)
