Hi Amylose complexation with diacylglycerols involves multiple intermolecular interaction mechanisms

In summary, we investigated the complexation and interaction mechanism between amylose and functional DAGs with different chain lengths. The structure of DAGs severely affected the degree of complexation with amylose owing to spatial arrangement differences caused by complicated inter- or intrachain crosslinking. Tight and weak intermolecular interaction mechanisms between starch and DAGs were indirectly revealed by XRD, DSC, and TGA approaches, and further proved by analysing changes in molecular conformation and interaction energies calculated from using in silico simulations. Especially for DMG and DSG ligands, V-type-like helical cavities were formed, driven predominantly by hydrophobic interactions, breaking the conventional perception that tightly interacted complexes are barely formed between starch and DAGs. The presence of V-type-like helical cavities and weak intermolecular interactions also blocked the entry of oxygen and digestive enzymes, thus enhancing oxidative stability and delaying the gastrointestinal digestion rate of starch. Our findings illuminate the antioxidation properties of DAGs and the health-promoting efficacy of starch in terms of molecular interactions, which is of great significance for intensive processing and utilisation of functional lipids.
