High amylose corn starch (resistant starch), a kind of dietary fiber, is an indiguctible starch. It cannot be directly digested by the human body, but it can be fermented by the microbial flora in the colon, which has a positive effect on metabolism. In general, resistant starch can be divided into four categories: embedded starch, native starch granules, regenerated starch, and denatured starch. Of these, we can take advantage of the first three.
Speaking of starch, many people first think of blood sugar and fat, in fact, there is a type of starch, not only will not cause obesity, and even reduce the effect of fatty liver.
Researchers at the Shanghai Sixth People's Hospital and the Hansnol Institute in Germany found that eating foods rich in resistant starch can reduce fatty liver and reduce liver damage. A total of 200 volunteers (145 males, 55 females, mean age 39.1±9.1 years) with fatty liver were recruited and randomly divided into two groups, receiving resistant starch intervention and the same amount of control starch intervention. Volunteers in both groups were fed with 20 g of starch mixed with 300 ml of water before each meal, twice a day. After 4 months, the group receiving the resistant starch intervention:
1. Fatty liver was reduced and the degree of liver injury was improved: compared with the control group, the absolute reduction of intrahepatic triglyceride content in the resistant starch intervention group was 9.08%, and the relative reduction was 39.42%. After adjustment for weight change, these figures were 5.89% and 24.3%, respectively, still significant. In addition, the volunteers in the resistant starch group had improved liver function indicators.
2. Weight loss and improvement of blood lipid levels: volunteers in the resistant starch group lost weight, and their insulin resistance status, systemic inflammation level, and blood lipid indexes were significantly improved.

Eating foods rich in resistant starch can satisfy your appetite, because it will "occupy an area" in the stomach and is easier to produce a sense of satiety. At the same time, because resistant starch is almost not digested and absorbed, eating foods rich in resistant starch is more conducive to weight maintenance. Friends with obesity and fatty liver may wish to consciously increase the intake of resistant starch.
